Our historic
distillery in the heart
of Franciacorta
The origins of the Borgo Antico San Vitale
date back to the early Middle Ages,
when Borgonato was mentioned
in an imperial document dated 879 AD.
The Borgo has been subjected to an archaeological investigation and careful
restoration work for about a decade. Using traditional techniques and materials
(stone, brick and wood), its ancient appearance was restored,
recreating the suggestive atmosphere of the past.
Historical bottles and unusually shaped stills: these and other tools accompany visitors along the exhibition path. A cabinet of wonders for the art of distillation that documents the methods of extraction of aqua vitae from the most ancient eras to contemporary times.
Guided by the master distiller, you can take an initiatory journey that always ends with the final prize: a studied, conscious tasting of our best grappas.
At Borgo Antico San Vitale, in addition to our grappas, you can discover the specialities of the Franciacorta cuisine, a surprising mix of tradition and innovation prepared for you by chef Stefano Cerveni. The Due Colombe Restaurant, a two-star Michelin restaurant, welcomes you to its space—with rooms of ancient charm and a loggia—set in one of the buildings of the Borgo.
The historic complex of Borgo Antico San Vitale includes exhibition spaces and meeting rooms for catering, banquets and meetings. Catering services and à la carte menus are available. The goal is to play an important role in spreading the culture, technology, and enjoyment of spirits by planning conferences, seminars, courses and competitions aimed at technicians, communication and hospitality operators, students, and to the most discerning consumers.
